I noticed this Los Angeles Times article – about saturated fats facts. Here is a key part of it, showing how there has been a long term deception of consumers regarding saturated fat nutrition facts.

Saturated Fat Won’t Kill You
“Somewhere between 10,000 and 53,000 people were tested on diets where saturated fats were replaced by unsaturated vegetable oils. The results did not turn out as expected — saturated fats weren’t killing people.
In a stunning example of science ignored, researchers, either unable or
unwilling to believe the study outcomes, did not talk about this data for decades. The results of one of the forgotten trials, a large NIH-funded study, were not published for 16 years. Another analysis that failed to link saturated fats with heart disease, part of the famous “Framingham Study,” languished, also unpublished, in an NIH basement.”

Recently I heard from Al Sears, M.D. a leading edge medical doctor in research and development of natural products. He makes a good case for reversing obesity here:

Most people think liver disease only happens to alcoholics.
But the truth is that being overweight or obese actually puts you at a much higher risk for liver damage than alcohol.
In fact, alcohol contributes to only 6% of liver damage. But obesity contributes to 52% of liver disease.

NAFLD can progress an even more deadly form known as non-alcoholic
steatohepatitis (NASH). About 10% to 30% of NAFLD patients develop NASH. And they are more likely to die from their liver disease. NASH can progress to hepatitis, cirrhosis, liver cancer or liver failure.

“The rise of HFCS
High fructose corn syrup production begins with making syrup from cornstarch. This initial stage corn syrup† is mostly glucose, and you can find it in the supermarket (pro tip: mix with red food coloring to make cheap and very convincing fake blood). This syrup is then isomerized (i.e., atoms shuffled around) to convert some of the glucose into fructose…”

U.S. history when sugar was becoming more expensive (in part due to trade restrictions) and corn cheaper. Farm subsidies encouraging farmers to produce as much corn as possible resulted in excess supply and thus falling prices. Manufacturers stood to save money by switching to corn-based ingredients. In 1980, Coca-Cola began using HFCS in its beverages, and by the mid 80s most other soft drink companies had followed suit.”
